Mushroom + Walnut Meatless Balls | Paleo, Whole30, Vegan, & Keto Approved

I’m a HUGE fan of finding the perfect texture and delicious taste when it comes to making plant-based, meatless balls. I can say, first off, that mushrooms and walnuts are a staple for me when it comes to making any kind of whole food based imitation meat. Lentils are another awesome ingredient, but for this recipe I really wanted to hit all the bases and be able to call these suckers Paleo, Whole 30, and Keto approved, along with of course being fully plant-based. There are so many ways you can enjoy these vegan balls! They are surely bomb over pasta or your favorite veggie spirals. You can also serve them, with toothpicks, on a snack tray beside a couple of sauces for dipping. They would make a great addition to an appetizer spread! So, without further ado, here is the recipe. Feel free to double it and pop a few in the freezer for another day.

 

 

 

 

Ingredients:

(makes ~15 balls)

  • 1 cup chopped red onion

  • 3 cups chopped portobello mushrooms

  • 1 1/2 cups walnuts

  • 1/4 cup chopped parsley

  • 1 tsp extra virgin olive oil

  • 1 cup coconut flour

  • 1 heaping tbs tomato paste

  • 3 heaping tbs nutritional yeast

  • 2 tsp pink salt (or to taste)

 

Directions:

  • preheat oven to 400

  • Sauté mushrooms, onion, walnuts, and parsley with olive oil on medium heat until soft

  • Transfer to food processor or high speed blender and add in salt, nutritional yeast, tomato paste, and coconut flour

  • Pulse until you have a “meaty” looking and fairly smooth texture

  • Create ball shapes with your mixture and add to a frying pan with a bit of olive oil on medium heat

  • Let simmer until slightly browned on each side 

  • Transfer balls to a baking sheet lined with parchment paper

  • Bake balls for about 15 min

  • Let cool and serve as desired over veggie spirals, pasta, on a sub, or snack tray with sauces of choice
